Review: One Fullerton UsQuBa Fine Dining

UsQuBa – Scottish Restaurant & Bar at One Fullerton is now open with Executive Chef Guven Uyanik that hosts a 160-seater dining room and a bar. They are open daily from 11.30am till late in the evening.

If you don’t know where is the exact location, just remember it as the old Butter Factory. Chef Guven Uyanik has amassed practical skills and honed his inner creativity by working with a stellar cast of famous chefs such as Gordon Ramsay and Thomas Keller.

I was filled with awe as I took the first walk into the interior of the restaurant as my eyes is greeted with a panoramic view of the Esplanade & Marina Bay Sands. As dusk set in, the array of lighting displayed from these buildings were absolutely breathtaking!

The Sexy bar corner.

Speaking of bar, alcohol & cocktails naturally ring in your mind. I would say they have a few interesting, unique choices not to be missed such as the ‘Negroni’ and ‘Whiskey Sour’. Ladies, rest assured that the alcohol content is not overpowering. In fact, the alcohol balances off very well with the citusy from the orange peel. Hence, you guys can just let your hair down and go for a couple of shots of these while you enjoy the light-hearted chat with your date or enjoy the night scenery!

We were served complimentary Bread with Truffle.  Just look at the generous slices of truffle on top!

This leads to my first big compliment of their food: They are very generous with the expensive ingredients e.g. truffle and even the foie gras as you read on below. Every penny you splurge in this restaurant will definitely be worth its value.

Orkney Islands Scallop Ceviche ($25)

This is one good appetizer to kickstart your mains. The combination of scallops and sea urchin is perfect. Simple yet delectable. The freshness of these two ingredients is conveyed through every mouthful of its sweetness.

Seared Foi Gras ($21)

~ Spiced persimmon, pickled apple, waffle.

See the portion! I am not exaggerating when I said they are pretty generous with their expensive ingredients. Compared to many luxury restaurants out there, UsQuBa sure served one of the biggest slice I have tried. Sure did satisfy my huge craving for Fioe Gras with this dish!

Ravioli of Pork Cheeks ($21)

~ porcini sauce, confit onion, port wine reduction, red radish

This dish is amazingly soft and flavorful. We even kept the sauce to pair it with other sides. The other compliment I have for the restaurant is the amount of hard work it placed into every dish. Take for instances the pork cheese in this dish; it was braised for 26 hours before wrapping it with pasta skin thus making the taste very robust!

UsQuBa Fish and Chips ($32)

~ sous vide code, mushy p sas and mint, pommes maxim

Probably one of the most interesting dishes around because cod fish was used. As for the chips, if you were expecting those typical fries, then you are going to be disappointed. But looking at their classy definition of chips (on top of fish), all those disappointment you have initially is going to just dissolve away with that first crispy bite!

Duet of Aberdeen Angus Beef ($56)

~ grilled tenderloin, braised short ribs, plum jus

My favourite is definitely this! It gives you two versions of cooking the beef. I prefer the grilled half as it is being grilled to optimize its full tenderness.

Tastings of Strawberry ($15):

~ pistachio biscuit/cream, strawberry juice and sorbet

We loved how refreshing the sorbet was and strawberry lovers will enjoy this for sure!

I might not have much experiences with Scottish cuisine but after trying out UsQuBa, I think I love Scottish cuisine already!

We often have the preception that fine dining is expensive and small in portion. To be honest, fine dining can be affordable. The price can be slightly more expensive than normal restaurants because the ingredients used are often the top-notch ingredients.

The Royal Mail has now come up with set lunch menu that brought fine dining to a whole new level!

3 Course Set Lunch at $38
2 Course Set Lunch at $35

Starters, Main Courses, Desserts.

Ala Cart is also available.

I gave almost every dish a try.

Sous Vide Half Main Lobster – with Japanese pumpkin, crispy jamon lberico de bellota, saffron becurre blanc and port jus.

Sauteed Chestnut & Grapes

Duck Fat Baby Potato, Casserole of Mushrooms and more. There was also a Truffle side – Truffle Mashed Potato (which isn’t in any of the picture). The mashed potato was super good!!

For the main courses, my favourite was the Deboned Fish of The Day and Lobster Linguine.

The fish was so good that we had a second helping that night. Roashed whole fish with grilled lemon, garlic confit and scallion. A 4 out of 5 star dish.

It was literally roasted to perfection. Yummy. The serving of this course is quite huge whereby it can feed at least 3 – 4 pax.

Kurobuta Pork Chop – whose meat was extremely tender. It was accompanied with caramelised apple and apple jus, NOT POTATOES. Pork lovers gave it a 2 thumbs up that night.

Roast Prime Rib: The classic cut (280g). Served with sauteed brussels sprouts and molten blue cheese, pine nuts, roast whole garlic, yorkshire pudding and veal jus.

Now, meet the star of the night! It was lobster linguine with garlic, semi-dried tomatoes, chilli oil, lobster and squid ink espuma. I don’t really like to order squid ink pasta outside because some squid ink would stain the teeth. However, the squid ink espuma they use in The Royal Mail doesn’t!

It was so good that when it came, every one at my area took a scoop of it, leaving me with 3 mouthfuls only. Of course, I ordered a second serving! HEH. The pasta is silky smooth and the lobster was fresh and chewy.

I had so much food that night that I almost wanted to skip the desserts but I was told that Eton Mess was really good and it is a must try. So I tried!

I like the combination of strawberries, hazel nut crunch and Meringue. The mixture of devon cream and salted caramel balanced out the sweetness of the caramel.

Second pick for desserts would be the Chocolate Fondant – molten centre chocolate cake served with tahitian vanilla ice cream and freeze dried raspberry chocolate crumble.

We had so much fun gathering and trying out all the different dishes. Guys, you do not have to worry about spending too much on a fine dining date with this set lunch menu. It is going to keep your pocket safe!

Prices are subject to 10% service charge and GST.

LP+TETSU, 2 affordable & world class cuisines

Featuring LP-TETSU, whose chef is a One Michelin Starred Chef, Chef Laurent Peugeot who deftly executes both authentic Japanese and French styles with precision and ease.

Now, the lauded chef has created a variety of Japanese as well as French menus that are bound to wow his guests. These menus are the most affordable ones ever offered by a Michelin starred chef!

One example is the Japanese Bento Box ($28) shown above. Dig into the freshest selection of sashimi, breaded pork loin that has a crunchy exterior and tender inside.

How many fine dining places can you find at such prices (moreover, with a Michelin Chef)?

Surprisingly, the rice was my favourite item in the bento. It was so good that I don’t even mind having it plain.

Diners can look forward to Chef Peugeot’s unique ability to awaken all five sense during a meal. Not only do his creations smell and taste good, they are visually appealing as well.

Let’s go through some of the food that was in the menu that night.

My favourite course was the Tempura, Tofu, Mini Legumes, Dashi Consomme. The tofu was soaked in warm miso soup with fried tempura on the other plate. I really liked the miso soup so I had an extra serving of it that night.

Miso Red Fruits. Chiogga Beetroot with Duck Breast.

This was really tender and good. A nice blend of flavours and the meat was so soft and chewy.

My dessert was the refreshing Blood Orange Sorbet with chocolate, beetroot. You gotta finish it fast before the sobert melts!

With “Encounters”, the consummate chef turns everyday ingredients such as damon and duck breast into haute cuisines. If you prefer the french menus, you can choose to have either the 2 course or 3 course meal at $35 and $45 respectively.

The menu will change monthly so patrons can expect new surprises every month. They are available from 6 November onwards and from lunch to early dinner (7.30pm) daily.
