The first ever collaboration between the cake specialist and Nature’s Farm, the Queen Bee Mother’s Day Cheesecake is a non-baked cheesecake comprises of luscious cream cheese mousse infused with Nature’s Farm NF UMF 5+ Manuka Honey. Above this mellowly translucent layer is a sprinkle of Osmanthus and Goji Berries jelly, finished with a topcoat of Manuka honey glaze.





But why non-baked? Chef Daniel Tay, founder of Cat & the Fiddle, explains this option to ensure the nutritional values of Manuka Honey are intact, therefore it is imperative to keep the Manuka Honey to be always below 60 degree Celsius.

And more importantly, this cake is made with every mother in mind. To balance between maintaining good health and savouring sweet indulgences, the Manuka Honey is used to replace sugar, and the ingredients like goji berries and osmanthus contains wholesome health benefits. The cheesecake itself is not overtly sweet but subtly so, and what would probably wow your mom is the upper layer which is visually delightful and rich in flavour.

Harvested from the New Zealand Manuka bush (Leptospermum Scoparium) and then bottled for Nature’s Farm. The Manuka Honey are available in UMF 5+, 10+ and 15+ in 500g and 1kg. The UMF rating is a measure of the attributes and values that make up Manuka Honey.
