Exquisite Traditional Indian Cuisine @ Tandoor, Holiday Inn Orchard City Centre

If you are in the mood for something fancy and Northern Indian, head to Tandoor, a restaurant synonymous with authentic traditional Indian cuisine at Holiday Inn Singapore Orchard City Centre. The premise is beautifully decorated with a contemporary vibe, right at the very end a floor-to-ceiling see-through kitchen window so you can see the chef prepare your food.

We had the non-vegetarian set menu, which is all beautifully presented and taste as appealing as it looks, worthy of the Singapore’s most awarded Indian restaurant namesake. This only gives me wonder how the vegetarian set menu looks like, only if I have two stomachs!

The first dish is the Masala Crab Cake. Every bit of the spiced crab meat is a delight especially when you hit that duck foie grass and mango confit. This dish balanced the savoury and sweetness well with the pairing of pear, rhubarb chutney and warm toasted brioche.

Next up the soup dish. Makai Ka Shorba, which is sweet corn velouté served with masala potato gnocchi. As a sweet corn lover, I like that the inventive Chef Bobby Krishnan turned up the richness of the soup which at the same time cleanse the palate for the next course.

Our main course is the visually arresting Sea Perch Pakora. The deep-fried cumin flavoured Sea Perch fish, while looked deceptively dry, is so soft and full of flavour attributed much to its Ibeko caviar batter. Tagged along with prized ingredients such as Jerusalem artichokes, avocado and a dash of scallion dressing, this could very well be the most satisfying fish dish I had and a HPB approved one.

The fall-of-the-bone Australian Lamb Shank is so artfully tender and almost melt in the mouth. Coupled with a Cherry Vine Tomato resting on a bed of cassoulet on the other side of the braised sauce to balance the meatiness. Wish I had more of the lamb though but at this stage I am quite full already so I am not complaining.

For desserts, we had the Cardamom Ice Cream. The profiteroles is marshmallow soft and sweet with citrus centre, giving you a sweet ending of the entire satisfying course.
What Tandoor offers is a whole experience – a mesmerizing atmosphere with great food and impeccable service. You will probably not need more than that to have a good time.

Indulge bountiful feasts at The Carvery @ Park Hotel Alexandra

If you want to pig out, you can consider doing so at The Carvery, Park Hotel Alexandra. This popular buffet restaurant celebrates the lunar new year with an abundant array of mouth-watering meats, seafood, sweets and treats that are worth every calorie. I like my yusheng to have bursts of citrusy sweetness – bonus if its healthy – instead of being blanketed in sugar. The Carvery Golden Eight Treasure Yusheng with Cured Trout and Abalone ($68+) suits my palate perfectly. The combination of shredded vegetables, candied walnuts, fruits and generous topping of cured trout and abalone, all brought together with a slightly tart white balsamic and peach dressing.

Following the tradition of abundant feasting, The Carvery has lined up auspicious marquee highlights of the signature roasts. From chicken, pork, lamb and beef – all these premium meat cuts are served at the carving station right smack in front of the entrance so you won’t missed it.
Using only top quality Australian prime rib further dry-aged with Himalayan salt to concentrate the flavour before slow roasting, the Angus Beef Prime Ribs (weekends only) is the piece de resistance at The Carvery. You just cannot go without trying it!

The signature ones for this CNY includes the Pork Porchetta with Mushroom and Chestnut Stuffing, which is the Chinese Roast Pork made from Prime Grade pork belly with satisfying crunchy crackling skin, and the Spit-Roasted Char Siew Chicken. The bird possesses that sweet, savoury richness which probably came from Chef Ian Hioe’s own seasoning mix of hoisin, superior cooking wine and other condiments.

New Year New Skin Clarity – Removing Acne Scars the Painless Way with Secret RF

Pimples come and go, but acne scars are like permanent marks on the face. You don’t need a close inspection to notice the acne scars on my cheeks and forehead, the contours look just like the uneven sand playground my nephews love to play at. Thankfully, a friend recommended me to visit Aesthetics Central Clinic at Clarke Quay Central, and scheduled an appointment with Dr Ryan Tan, who has a decade of experience in the aesthetics treatments. Dr Ryan suggested Secret RF for my first acne scar treatment – a revolutionary non-surgical treatment that uses fractional radio frequency (RF) and micro-needles for the treatment of depressed acne scars like boxscars, ice-pick scars and rolling scars. It also has added benefit of skin tightening and lifting, and addressing signs of aging such as fine lines and wrinkles.

The Treatment
Before commencing the treatment, my face is washed and subsequently numbing cream is applied by the assistant. Then I waited outside for around 30minutes for the numbness to take effect. Dr Ryan then proceeded to inject 2 shots of local anesthesia onto my cheek to reduce the pain.

As I have a low pain threshold, the Secret RF treatment is surprisingly not as pain as I thought to be, almost pain-free. All I hear is the zapping from the Secret RF device and light flashing while the device work its magic around my face.

As you can see, while there is no bleeding or bruising, my face is red and abit swollen immediately after the treatment. To speed up the recovery process I will need to apply anti-biotic cream for 5 days, and remember to hydrate, moisturize and sunscreen!
Nevertheless, I went out after the session to meet friends as its weekends.

A week after the treatment, the redness has subsided after 2 days and I am quite happy with the results as the acne scars have reduced, especially on my right side of the cheek. The skin is also much smoother and whiter too! I was told that I will require a combination of treatments such as Infini Acne Scar Treatment or CO2 laser to achieve better results.

Just see the above before treatment and after treatment comparison, the skin condition is so much better. Confidence restored! Nevertheless, as the scars has been haunting me for a decade plus already, more sessions are needed to completely zap away these acne scars.

Festive Feast @ The Square Restaurant, Novotel Clarke Quay

The sumptuous spread artfully presented at The Square Restaurant @ Novotel Singapore Clarke Quay would have made even King Henry VII envious. Packed in 1 room are 2 buffet spreads – Christmas and Chinese New Year themes – all equally enticing and with sinful desserts to boot.

It’s a merry little Christmas feast at The Square Restaurant from 1st to 31st December 2019. Starting the traditional xmas festive favourites with the proteins – 24-hour roasted brine turkey, roasted beef striploin and roasted lamb leg. There’s also A-la minute pasta with homemade salted egg sauce or Chef Kishen’s new creation – Mala sauce, which is not too spicy for me. Adding on the spread will be Seafood on Ice, Sushi and The Square Signature Laksa.

Here’s something to loosen up your belt for – the desserts. Their homemade Christmas Log Cake, Fruit Cake, The Square Signature Durian Pengat, Chocolate Fondue and Tiramisu are some that’s worth the extra calories for.

Coming in to the second festival which is just 2 months away, the Chinese New Year buffet would kickstarts from 8 January to 8 February 2020. Following the traditions, we have a toss of Yu Sheng to usher the new year with prosperity and start the year on the right foot. The Yu Sheng we had, of course is Novotel-style MEGA.

The spread features assorted Chinese BBQ platter, Roasted Chicken & Duck, Poached Broccoli with Dried Oysters & Black Moss and Dim Sum. The roast is always my favourite, and its perfectly moist and juicy meats perfectly cut by a master carver are worth more than gold.

For Lunar New Year’s eve, there’s the DIY Kong Bak Pau Station, Wok Fried Salted Egg Prawn, Wok Fried Sliced Beef with Fungus and Black pepper Sauce, and the not-to-be-missed traditional Hong Kong Style Steamed Pomfret. It’s freshest of the fish its not overpowered by the sauce, brilliantly executed.
Not to mention local infused pastries like Pandan Egg Tart, Taro Butter Cake, Bak Kwa Chicken Floss Swiss Roll and many other sensational desserts, to make your tummy and the year round and sweet, figuratively speaking.

YUN NANS (云海肴) opens its second outlet @ Westgate in style

The largest Yunan F&B chain in the world just opened its 2nd outlet at Westgate, months after its flagship store at Jewel Changi Airport. Serving the local gourmands with its repertoire of highland cuisine (gao yuan liao li), the offering is a mixed bag of deliciousness with subdued stylishness, which I fancy very much.

What’s different from its flagship store is this exclusive dish – Crispy Hor Fun with Truffle Prawn Broth ($15.90++). Only available at Westgate, the hor fun boasts a delightful interplay of texture of crunchiness and springiness with every bite. Topped with Yunan truffle shavings, when poured with the prawn broth is enough to perfume the whole table. The frying is done well too. The plump prawn is moist with a bite. A simple but satisfying dish.

Another dish that is new to the menu is the New Mystery Steam Pot ($33.90++). A fresh take on the classic YUN NAN’s top-selling dish Steam Pot Chicken with a secret ingredient added in to give it a personality. The soup is brewed using a unique technique that does not require a single drop of water. Instead the chicken is pressure-steamed for three hours. The soup is clear, delicate yet nourishing and robust in taste, which distinguishes it from the other versions I find in Singapore. Its an order that won’t disappoint your guests or family members.

While I am spoilt with many choices at its flagship store @ Jewel, and tried to gulp down as much and fast as my chopstick’s skill can, this Steamed Red Grouper with Green Peppercorns ($48.80++) is new to me. Unforgettable, in a good way. The tantalising meat is so tender and moist, steamed alongside fresh green peppercorns for that fragrant and subdued numbing effect. Available only in limited quantities per day so do order beforehand.

I know I am jumping around here, but the appetizer is good too. One star of the dish is the Shredded Chicken in Chili Lime Dressing ($9.90++). Nutritious black chicken is blanched and shredded by hand, mixed with their own in-house sour and spicy chili lime dressing. Very refreshing and wallet-friendly.

Nono’s First Fried Chicken Outlet @ JEM

Hailing from the land of vibrant street food culture, Taiwan’s famous fried chicken brand Monga is opening its first-ever outlet at Jurong East Mall in Singapore on 28th September. The brand has generated long snaking queues in the U.K, Canada and its home country, and attributes its popularity to its fresh, tender and juicy thick-cut chicken fillets unlike any other fried chicken brands out there. And funny Taiwanese celebrity Nono is here to blessed the opening. Together with Mingdao Liu, king of Taiwanese Fried Chicken, Monga is born.

#DidYouKnow that this Taiwanese fried chicken chain got its name from the Wanhua district of Taiwan, which is traditionally known as ‘Monga’. Its Taipei’s oldest district home to the bustling Snake Alley night market which the fried chicken fillet is famous for. So it’s a timely homage to the recent past and share the delicacy across beyond its home country.

I particularly love sinful oily fried food for its savoury bite. So its natural for me to gravitate towards Monga’s Nuggets (6pcs for $5.90, 9pcs for $7.90) and Fried Chicken Skin ($3.90). So easy to pop these into the mouth which makes them dangerously addictive.

Of course, who can miss Monga’s main offering – the big slab of fried chicken, every piece is made fresh and served piping hot. 3 flavours – The King ($6.90), which is dusted with original salt and pepper seasoning; Hot Chick ($6.90), dusted with chili paprika powder hand-made from Anaheim peppers; and The Taiker ($6.90), dusted with Japanese sauce and seaweed powder imported from Okinawa.
Among the 3 thick juicys I still adore the original one. The salt and pepper further enhanced the lovely fried taste of the chicken, and it’s just so satisfying mouthfeel to chomp into. Just to think about what I had munch makes me wanting for another bite again, just like a carnivorous caveman.

There’s also other yummies such as the Signature Fries ($2.90), Seaweed Fries $3.50, and the crowd favourite Sweet Potato Fries with Plum Powder ($3.50). While my hands dived into these finger foods I was humorously distracted by the whimsical fan and the comedic prowess of Nono during the event. For me who lived in Hougang, I must say its worth the trip to visit at least once!

Speaking of fried rice, I cannot miss this Fried Rice with Pork Chop. Instead of medley of prawns, it’s a big slice of pork chop cut into chewable pieces. The fried rice looks inviting from below and can hold its place without being overpowered by the pork chop in the flavour zone. An iconic dish that’s unmistakeably everyone’s favourite for its heartiness.

Deviating from the fried rice category, there’s the Chicken Wings in Shrimp Paste (Har Cheong Gai). Texturally, the wings are delightful to munch. The umami of the shrimp paste works perfectly with the chicken, as expected of the standard of Din Tai Fung.

The Deep-fried Handmade Tofu, though doesn’t really appeals much to the eye visually, is actually very appealing to the mouth. It distinguishes itself from other countless versions in Singapore with its inner tender silkiness and non-oily yet crunchy skin. You can order this and will not be disappointed.

Lastly, who can mention Din Tai Fung without mentioning its signature classic Xiao Long Bao? Pretty to look at and really impressive in its soupiness with smooth thin skin layer, this XLB is just cloying for a second helping.

Back to Roots 5-Course Dinner @ Porta

If you elevate all-vegan, meatless dishes and paired them with organic wines, you get this 5-Course Back to Roots affair at Porta. Available on 5 October only, from 6.30pm to 10.30pm, $69 per person with pairing or $52 per person without wine pairing. Seemingly unassuming, this is an veg fine-dining experience unlike any other I have experienced.

Our evening starts with Lotus Root crisps and kombu-braised daikon. A dash of black vinegar, sesame oil and spiced Romesco puree whets the appetite for the next dish. The crisps are crunchy, with a whimsical play of the apparatus drip. Mild or Strong, the flavours are entirely up to you.

Then came the soup. Purple Potato Soup tempts with multi-dimensions of intensity, textures and contrast. It’s creamy with a light crispy wonton skin and a dash of harissa oil. Paired with an easy wine that comes with a deceptive complexity, Cotes du Rhone Parallele 45 Blanc 2017. Intense, fruity yet floral, with round, generous and elegant notes of a balanced finish on the palate.

This clever combo deserves a handshake with the chef. Baby Beetroot with citrus-infused rose apple – the play with beetroot, baby beetroot, refreshing and juicy Jambu (rose apple), cacao nibs for added depth of crunchy bitterness and almost surprising lobes of Thai lime vinegrette. To enhance the intense depth and character of this dish, the recommended Cotes du Rhone Parallele 45 Rouge 2016 Co gives the palate a delicate touch on the tongue, with hints of raspberries, redcurrants and licorice.

On the fourth dish is the sliced Celeriac prepared in roasted onion sauce and Maitake mushroom. My personal favourite, the texture and sauce give a meaty mouthfeel on the first bite. It immediately struck me that this could be an elevated version of Beyond Meat. Crozes-Hermitage Les Jalets 2016 is recommended for this creation.

For our dessert we had a refreshing fruit-based dessert – Sapodilla or chiku butter cake is served with tenderly-stewed persimmon, roselle jam, poached jujubes and gooseberries. The dense palate of the cake combined with assorted jam (tenderly-stewed persimmon, roselle jam, poached jujubes and gooseberries) is like a dance on the mouth. The Muscat de Beaumes de Venise Le Chant des Griolles 2014 finishes off beautifully.

My verdict? Surprising tasty and filling despite it was vegetables. I almost forgotten about meat already.

Korean bistro Burger+ Launches New Limited Period Menu @ Wisma Atria

If you’re into everything Korean – be it food or kpop music – then Burger+ could just be your place to be. Started by a pair of burger aficionados with a team led by founder Daniel Koh and co-founder Ms Lee Mihyun, both burger enthusiasts with over 10 years of experience, it’s hard to believe that this music pumping burger bistro is just 3 months old. And 3 months is just the right time to launch a timed menu with items such as Cheesetos Chicken, Tteokgangjeong and Truffle Ice Cream, available for a limited time only from 1 September to 30 September.
Look forward to a uniquely Korean creation – the Tteokgangjeong Combo Set ($18.50+) which features fried toppoki and drumlets that’s drenched in your choice of sauce. But be warn, the hot Yangnyeom Chicken is fiery hot. If it doesn’t make you sweat buckets, it will make you rush for the nearest smoothie to drown off that satisfying sting, like I do.

For a milder version, get the Cheesetos Chicken Combo Set ($18.80+). While it also features the flaming Hot Yangnyeom Chicken, the spiciness is doused by a blanket of homemade melted cheese to give it a balanced, flavourful taste.

Besides the timed menu, there’s a series of burgers to grab on. For me its definitely the Truffle Burger. Such rich flavour, and the truffle smell doesn’t overpower the savouriness of the beef patty.

Want to enjoy a hearty burger with less guilt? For the non-beef eaters and the more health-conscious, opt for the Fish Burger with Avocado ($10.90). The crunchy, lightly-seasoned dory fish fillet is balanced by the creamy avocado to give that umami oomph.

Okai, understand that ice cream as dessert is typical for your palate, but have you tried Truffle Ice Cream ($12.90+)? Boasting the same rich truffle fragrance and flavour found in the Truffle Burger, this creamy, luscious Wooyu (vanilla) soft sere topped with real black truffle powder and wafer biscuits will sure swept you to the ninth degree. Quite an ultimate, albeit unexpected, end-of-meal treat.

What? The Stars Cook Our Dinner @ Taste Singapore Star Charity Cook-Off

The stars were aligned together for a charitable cause last Wednesday evening at Taste Butchery & Seafood Factory Outlet. Taste Singapore Star Charity Cook-off saw two A-list yi ge celebrities Li Nanxing and Christopher Lee come together to cook four dishes, and the fresh ingredients were procured from the new gourmet supermarket factory outlet.
Being also home to the first Taste Star Kitchen where the dishes made from family recipes of local celebrities can be pre-ordered, naturally it is the perfect destination where the cook-off happens, and I just happened right at the centre-stage to witness two stars fight each other out culinarily.

After the cookout, a star-studded wait staff including Fann Wong, Constance Song, Julie Tan and Wei Le served guests of the evening with tasting portions of the dishes.
I tried Li Nanxing’s Beef and Chicken Rendang, both of the dishes were his mum’s favourite. Despite the fact that the meat was slightly cold due to the wait, the flavour and richness of the rendang sauce still remain. The meat was tender and hearty, and the umami hits you immediately like a warm embrace.

Christopher’s Braised Pork and Pan-Fried Prawns isn’t a distant contender either. The prawns might look subtle in the picture, but they are stunningly rounded and rich. Well, fresh prawns need very little to make them work, but the sauce raises the umami levels to such a pleasant high. Pork, being a versatile meat, is made tender and its sauce just seals the deal. No wonder these two dishes are Fann Wong’s favourites.

There was also a free-flow buffet dinner of all the premium items found at Taste Factory Butchery & Seafood Outlet and its affiliated brands throughout the event. We just went crazy with the lamb shanks, iberico pork ribs, crackling pork belly and teppanyaki chicken leg. All the hot meals were from Surf & Turf – a ready-to-eat and takeaway food section featuring Western and Asian dishes like grilled salmon, oven-roasted pork and steaks.
